Historic pies at Welbeck with Ivan Day

Celebrated food scholar Ivan Day will be returning to the School of Artisan Food at Welbeck next weekend to talk pies and ices and teach long-forgotten cookery techniques.

Ivan is a renowned food historian, with his expertise for re-creations of historic meals and table settings in high demand.

On September 3 and 4, he will be teaching at The School of Artisan Food with two fascinating courses which will bring long-lost recipes back to life.

Students on the Historic Pies and Historic Ices courses will create a selection of ice creams, sorbets and pies spanning the centuries, drawing on Ivan’s amazing knowledge and using his rare antique kitchen equipment.

Ivan said: “Welbeck is an ideal location for me to take students on a culinary journey back through time and create historic foods.

“These are endangered recipes, and it’s wonderful to be able to keep them alive and pass them on through charities like The School of Artisan Food.

“Although many of these recipes seem unusual and complicated to modern cooks, at their heart lay skills and ideas that can still be used today.”

The one-day workshops run from 9.30am to 5pm each day and cost £175 for the day. Places must be booked in advance by calling 01909 532171.
