smati rice
20 fluid oz boiling water
Bay leaf
Four cloves
Four green cardamom pods, lightly crushed
1 tbs olive oil
Red and yellow food colourings
MethodHeat the oil in a heavy based pan with a tight-fitting lid
Add the bay leaf, cloves and cardamoms and fry for a few seconds, stirring all the time.
Tip in the rice and coat each grain thoroughly with the oil.
Add the water and bring back to the boil, then stir ONCE ONLY and put the lid on. Leave for 15 minutes.
When cooked remove the spices and bay leaf and drop a few drops of red and yellow food colouring onto the surface of the rice.
Put into a warm oven for a few minutes to set the dye and then fork through and serve.
