COOKS AROUND TOWN - Yuk Sung, Chinese pork in lettuce wraps

IF you've ever been to a Chinese restaurant and had those delicious pork and vegetable lettuce wraps, you might like to try these that I 'interpreted' myself.
INGREDIENTS:

1 lettuce (iceberg or Chinese leaf)
1 carrot, very finely chopped
1 stick celery, very finely chopped
A thumb-sized piece of ginger, finely chopped
2 tbs bottled oyster sauce
400g minced pork
2 tsp Chinese five spice powder
2tbs olive oil
1 tbs sesame seed oil
1 tsp salt
8 closed cup mushrooms, finely chopped
200g beansprouts
A splash of soy sauce

METHOD:

Heat the oil in a wok or heavy-bottom saucepan and cook the pork until it turns from its pink colour to a light almost white colour all the way through. This should take about four or five minutes.

Add the rest of the ingredients (Except the lettuce) and stir fry for another five or six minutes over a fairly high heat

Serve wrapped in individual lettuce leaves and sprinkled with more soy sauce.
