COOKS AROUND TOWN - Sweetcorn Fritters

Try these crispy veg-based wonders!
Ingredients
200g tinned sweetcorn, drained

1 onion, very finely chopped

200g gram flour

1tsp salt

1 tsp ground corriander

1 tsp mixed herbs

2 cloves garlic, crushed

4fl oz water

Sunflower oil for deep frying

Method

– Combine the gram flour and water in a large bowl and whisk until smooth.

– Add the salt, corriander, herbs, garlic and onion and stir into a thick, lumpy batter.

– Fry tablespoon-sized lumps of the batter for four minutes either in a deep fat fryer heated to 180c or in 4cms of oil in a deep frying pan or wok (turning regularly) also heated to 180c. 180c is the temperature at which a 1cm chunk of bread will turn golden brown in approximately one minute.

Take extreme care when deep frying.

– Drain on kitchen paper and serve hot or cold.
