It's very easy to make your own pasta. You do need a pasta machine, which you can buy for about £20-30 and it's even easier if you have a food processor too.

Ingredients

100g Italian '00' flour or plain flour and 1 large egg per person.

Method

l Combine the flour and eggs in a food processor until it becomes a firm dough.

l Knead the dough by hand on a lightly floured surface for about five or six minutes.

l Leave the dough wrapped in a clean, damp tea towel for 15 minutes.

l Cut the dough into six equal pieces

l Roll each piece through the pasta machine starting on the widest setting. Do this seven times, folding the dough in half before each run through.

l Now start to feed the dough through the machine (without folding it) on progressively thinner settings, ending with the second from thinnest.

You can now cut the pasta to use in your own recipes. It will take about 3-5 minutes to cook in slightly salted boiling water.
